What's For Lunch?

Hi all! I hope you are having a wonderful Saturday! I was at work all day, but the weather was amazing outside so I brought my lunch to Central Park! I just wanted to post a quick peek at what I had for lunch, hopefully it inspires you to pack a healthy lunch for your upcoming work week! Not only does bringing your own lunch save tons of money (especially in uptown Manhattan), but you have more control over your food choices, and you automatically enable yourself to make a healthy choice! I eat a fairly light lunch because I eat smaller meals more frequently throughout the day, as opposed to 3 large meals. My lunch, on work days, usually consists of the same combination: 1 small piece of fruit (like a pear or an apple), a large bowl of greens (I've been on a spinach kick lately), a protein (either 1/4 cup of beans or 1/2 cup of tempeh, seitan or tofu) and balsamic vinegar or dijon mustard for dressing. You can make lots of different combinations and get creative with seasonings!
